Low Carb Parker House Brownies

Las Vegas — This is a take off from the famous Parker House Brownies that created by a chef at Chicago’s famed Palmer house hotel during the 1893 World Columbian exposition.
I've switched ingredients for low-carb or sugar free equivalences. The sugar-free apricot preserves appear to be a thing of the past so I used sugar-free red raspberry preserves instead.
Low Carb Parker House Brownies
- 14 oz. Semi-sweet chocolate
- 1 lb. Butter
- 1.5 cups Splenda Sugar
- 1/2 cup Almond flour
- 8 Eggs
- 12 oz. Crushed walnuts
- 1 TS. Vanilla Extract
- Preheat oven to 300 degrees.
- Mix the sugar and flour together in a bowl.
- Melt chocolate and butter in a double boiler. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes.
- Combine chocolate and flour mixtures. Stir 4 to 5 minutes.
- Add eggs and vanilla extract and continue mixing.
- Pour mixture into a 9x12 baking sheet.
- Sprinkle walnuts on top, pressing down slightly into the mixture with your hand.
- Bake 30-40 minutes.
- Brownies are done when the edges begin to crisp and has risen about 1/4 of an inch.
- Let them rest for an hour before cutting.
Note:When the brownie is properly baked, it will remain "gooey" with a toothpick in the middle due to the richness of the mixture. (Mine was "runny" not "gooey" so went back into the over for about 15 minutes. I wonder if they meant 350 degrees? I'll research ;-)
Glaze
- 1 cup water
- 1 cup sugar-free red raspberry preserves
- 1 ts unflavored gelatin
Mix thoroughly and bring to a boil for two minutes. Brush hot glaze on brownies while still warm.
